Every bowl starts the day before. The bones roast at dawn, go into the pot by nine, and simmer below a boil until the next morning.

Why not boil it?

Boiling clouds the broth and flattens the flavour. A bare simmer keeps it clear and keeps the fat on top where we can skim it.
